These are some of our favorite waffles to make. We've been out of our whole wheat to grind into flour so we've been making this cornmeal variety a lot lately. We use our grinder to grind popcorn into fresh cornmeal and it makes such a difference! So fresh! They still turn out great even if you don't grind your own cornmeal though! Top with your favorite waffle topping. We enjoy the no sugar added flavored applesauce by Motts.
Cornmeal Waffles1 1/2 cups flour
3 tsp. baking powder
1 1/2 tsp. baking soda
3/4 tsp. salt
1 1/2 cups cornmeal
3 eggs
3 cups milk (we use soy milk and have the same results)
1/4 c. oil (I usually reduce to 2 Tbsp. or omit entirely.)
Mix dry ingredients together. In separate bowl mix wet ingredients. Add wet to dry and mix well. Bake on waffle griddle that has been sprayed with non-stick spray.

I have been wanting a recipe like this! I crave wheat waffles all the time and my kids are getting sick of them. I will have to try this. I have never ground popcorn for cornmeal....how exciting!
I love the sounds of these! What a nice change, and it would be gluten-free for we .... well, shall I say, sensitive creatures who just can't handle the WHEAT all the time!!!??? Thanks honey!
