Herbed Edamame, Black Beans, and Quinoa Salad

With Spring around the corner, I couldn't resist posting one of our favorite salads.  It is so flavorful and healthy.  We usually have it as a main dish, so I double it.

Herbed Edamame, Black Bean, and Quinoa Salad
Serves 4

1 1/3 cup water
2/3 cup uncooked pre-rinsed quinoa
1/2 (15 oz.) can black beans, rinsed, drained
1 cup frozen shelled edamame, thawed
2 cups loosely packed spring greens coarsely chopped
2 tsp. grated lemon zest
2 Tbsp. lemon juice (I don't add this)
1 Tbsp. olive oil
3/4 tsp. dried, crumbled oregano
1/8 tsp. dried, crushed rosemary
1 medium garlic clove, minced
1/4 tsp. salt
2 oz. reduced fat crumbled feta cheese (about 1/2 cup)

In medium saucepan, bring the water to a boil over high heat.  Stir in the quinoa.  Reduce the heat and simmer, covered for 8 minutes.

Stir in the beans and edamame.  Cook, covered, for 2 minutes, or until the water is evaporated.

Meanwhile in a large bowl, stir together the remaining ingredients except the feta cheese.  Add the quinoa mixture and the feta, tossing until the spring greens are wilted.

Serves 4.

Sour Cream Potato Salad

My sister-in-law, Sara, passed this recipe along to me to post here.  She lives in Alaska!  Isn't that crazy far away?!  But anyway...A friend of hers made this and Sara said it was the BEST potato salad ever!  I definitely want to try this.  I make potato salad with sour cream all the time but I've never seen it made with cottage cheese!  Very interesting!  I must try.  She did say that it is important for the mayo to be REAL mayonnaise and also to let it refrigerate for at least two hours before eating to let the flavors blend.  Whip some up for your next bar-b-q and tell us what you think!  Sorry there isn't a picture yet!  

Sour Cream Potato Salad

Ingredients:
8 large or 9 medium potatoes
small tub sour cream
small jar real mayonnaise
small tub cottage cheese
green onions, chopped
salt and pepper

Directions:
Boil potatoes (don't overdo it or they will fall apart while trying to slice them).  In a bowl, mix together sour cream, cottage cheese and mayonnaise.  Add some salt to taste.  In a large serving bowl put some of the sour cream mixture on the bottom and then add a layer of sliced potatoes.  Continue layering (I usually get three layers of potatoes) with the sour cream mixture on the top.  Garnish with pepper and chopped green onions.  Easy!

Black Bean Taco Salad With Lime Vinaigrette

This is really good.  I love the vinaigrette with it.  I was all ready to make this and went to get my green pepper and it had gone bad.  Bummer.  So I substituted a large zucchini and it was great!  I'm sure a green pepper in there would be great, too, but now that I've had it with zucchini I think it will always have to be in there.  I also added a small avocado to the vinaigrette which made it very creamy.  You could omit this or chop it up and mix it with the salad instead or leave it out entirely.  I served this salad in my baked taco salad bowls and dinner was a big hit!  You could also serve it in soft tortillas, as a filling for pita bread, or as a salad with crushed tortilla chips on top.


Black Bean Taco Salad With Lime Vinaigrette

Vinaigrette
1/4 cup chopped tomato
1/4 cup chopped fresh cilantro
2 tablespoons olive oil
1 tablespoon cider vinegar
1 teaspoon grated lime peel
1 tablespoon fresh lime juice
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon chili powder
1/4 teaspoon black pepper
1 garlic clove, peeled
1 small avocado, optional

Salad
1 cup chopped tomato
1 large zucchini, chopped (or 1 cup chopped green pepper)
1/2 cup finely diced red onion
1 cup frozen corn, partially cooked, rinsed with cold water and drained
1 (15 ounce) can black beans, rinsed and drained
lettuce greens, torn into bite-sized pieces or shredded
crushed tortilla chips, optional

-To prepare vinaigrette: combine first 11 ingredients in a blender or food processor, process until smooth.  Add avocado if desired.

-To prepare salad: combine all chopped veggies except lettuce.  Pour vinaigrette over top and toss well to coat.  

-Serve on a bed of lettuce greens.  Top with crushed tortilla chips if desired.  Also great in soft tortillas, taco salad bowls, or as a filling for pita bread.

Baked Taco Salad Bowls

These couldn't be easier and they are very crunchy and much healthier than the fried variety.  I use smaller tortillas, probably around 8", because they are more kid sized but you can use 10" or bigger as well.  Six 8" tortillas fit just right on my big sheet cake pan.  You might have to cook fewer at a time depending on how big your tortillas are and how big your molds are.  I use little ceramic ramekins turned upside down for my molds.  You can also use empty metal cans or oven safe glass bowls.  These can be cooked in advance and stored in an airtight container after they have cooled completely.



Baked Taco Salad Bowls

Whole wheat flour tortillas
cooking spray
salt

Preheat oven to 425 degrees.  Place up to 6 tortillas between damp paper towels on a microwave safe plate and microwave for 30-45 seconds, until steamed.  Arrange 6 empty metal cans or mold of your choice on a large sheet cake pan.  Drape steamed tortillas over molds and press sides down to form folds.  Spray with cooking spray and sprinkle with salt if desired.

Bake taco salad bowls in 425 degree oven for 7 minutes.  Remove taco bowls from forms and turn right side up on baking sheet.  Place back in oven for about 3 minutes.  Let cool on rack.  Repeat until desired amount of bowls have been baked.

Turkey Salad

This recipe is a variation of the Chicken Salad posted HERE.  I used leftover turkey and it was great!



Turkey Salad

Leftover cooked, cubed turkey
chopped green onion
red grapes, halved
sliced almonds
Mayo
Mrs. Dash-Garlic and Herb seasoning
salt & pepper to taste


Mix together and serve on bread, croissants, or over bed of lettuce.

Caramel Apple Salad

This is a fun salad to serve in the Fall.  It reminds me of caramel apples.  It's very sweet...more like a dessert!


Caramel Apple Salad

1 (8 oz.) Cool Whip, thawed
1 (3 oz.) package Instant Butterscotch Pudding
1 cup crushed pineapple (do not drain)
3 cups (about 3 large) diced apples, I like a tart apple like Granny Smith but any variety will work
1 cup peanuts, dry roasted (I like to chop mine)
1 cup miniature marshmallows

Mix Cool Whip, pudding mix, and undrained pineapple.  Fold in apples, peanuts, and marshmallows.  Chill for an hour before serving.

Black Bean Avocado Salad

You could make a meal out of this salad.  I love how fresh and light it is.  No heavy oils.  Make it at least an hour in advance so that the flavors can blend.

Black Bean Avocado Salad

2 cans Black Beans, drained and rinsed
1 1/2 cups frozen corn, thawed
2 tomatoes, diced (I like vine ripened or Roma)
1 avocado, diced
chopped cilantro to taste (1/2-1 cup)
2 green onions, diced
garlic salt, to taste (or you can just use salt)
juice from one lime

Mix all ingredients in a bowl.  Refrigerate for at least an hour before serving.

Spinach Mandarin Salad with Poppy Seed Dressing

This salad is filled with yummy flavors.  You can use your favorite store-bought poppy seed dressing or make this simple dressing.  It's a great salad to feed a group but if you're not going to eat it in one meal then I would suggest leaving the dressing off and adding it to individual portions.  It will make the greens wilt and nobody wants to eat soggy salad the next day.  Or you could just make a half portion of the recipe.

Spinach Mandarin Salad
1/2 head Romaine lettuce, torn into bite-sized pieces
1 (8-10 oz.) bag baby spinach
1/3 purple onion, thinly sliced
1 large avocado, cubed
1 cup Swiss or Mozzarella cheese, shredded or cubed
1 package bacon, cooked and crumbled
1 large can (or two small) Mandarin oranges, drained (and I also like to slice them in half to make more pieces)
Poppy Seed Dressing to taste

In large salad bowl, combine lettuce, spinach, onion, bacon, cheese, and oranges.  Gently fold in avocado.  Just before serving, toss with salad dressing and serve immediately.

Poppy Seed Dressing
1/3 cup rice vinegar
1/2 tsp. salt
1/2 cup sugar
1 tsp. mustard
1/4 tsp. pepper
1 green onion, ends removed
1/2 cup canola oil
1 tsp. poppy seeds

In blender, combine vinegar, salt, sugar, mustard, and pepper.  While blender is going, add green onion and then add the oil in a constant stream until it is mixed in.  Pour dressing into a bowl and stir in poppy seeds.

Strawberry Jell-O Salad

I like the salty pretzel crust mixed with the creamy and sweet layers.  I just use half of the recipe for my family and make it in a square pan.  This recipe makes a 9x13 size pan.  Sorry this isn't the best picture.  It was the last slice of the pan!

Strawberry Jell-O Salad
Crust:
2 c. pretzels, crushed
2 Tbsp. sugar
1/2 cup butter, melted
-Mix and press in 9x13 pan.  Bake at 350 degrees for 10 minutes.

Cream:
8 oz. cream cheese, softened
1 cup sugar
8 oz. Cool Whip
-Spread over cooled pretzel crust.  Chill.

Mix:
1 (6 oz.) pkg. strawberry Jell-O
2 (10 oz.) pkg. frozen strawberries (I like to get the sliced ones or else slice them myself but you can also leave them whole)
2 c. boiling water
-Partially set the Jell-O mixture.  Then pour over chilled cream cheese mixture.  Refrigerate until set.

Sundried Tomato Pasta Salad

This is a yummy salad I found on Pioneer Woman last summer.  That's when I made it, too, and I'm just getting around to posting it.  It was really good!  Since it's now summer again and salads are always welcome, I decided I better get it posted.  One change I made was to use regular black olives instead of the Kalamata olives (which I love but are a little too strong for the other 5 people eating in this house.)  You can go to her site for her great step-by-step directions. 

Sundried Tomato Pasta Salad

Dressing Ingredients:
1 (7 oz.) jar Sundried Tomatoes, packed in oil
4 cloves garlic
3 Tbsp. red wine vinegar
1 cup Extra Virgin Olive Oil
salt & pepper to taste

Salad Ingredients:
1 package (16 ounces) corkscrew pasta
1 jar Kalamata or assorted olives
1 pint ripe cherry tomatoes, halved
10 basil leaves, chopped or julienne
1 1/2 cups Parmesan cheese, freshly grated

Dressing:
In a blender combine sundried tomatoes, garlic, salt, pepper, and vinegar until tomatoes are chopped.  Continue blending while drizzling in olive oil until mixed together.

Pasta:
Cook pasta according to package directions.  Drain and rinse with cold water until no longer hot.

Pour 2/3 of the dressing over the pasta.  Add olives and toss together.  Add remaining ingredients, tossing together and adding more dressing until the salad is coated to your liking.

Serve on a big platter with an extra sprinkling of Parmesan cheese.

Cilantro-Lime Vinaigrette and Grilled Fish Tacos

I have never eaten Fish Tacos.  I know.  Crazy!  I love fish and I love tacos and I see this combo all the time but it never really sounded very good to me.  But I saw this recipe on Our Best Bites and for some reason it sounded really good so I decided to go for it.  The fish is marinated in a Cilantro-Lime Vinaigrette before grilling.  (Not to be confused with the Creamy Lime-Cilantro Dressing.)  I served them with delicious Creamy Lime-Cilantro Dressing on top (also from Our Best Bites) and my Homemade Salsa.  They were so good!  Every one of my kids loved them, too.  The cabbage slaw was a great addition to them!  This vinaigrette has great flavor and can also be served on a salad, not just as a marinade.

Cilantro-Lime Vinaigrette

1/4 c. fresh lime juice (about 2-3 juicy limes)
1/4 c. white wine vinegar or rice vinegar
4-5 cloves garlic
1/2 tsp. Kosher or sea salt
2 tsp. sugar
1 c. canola oil
1/2 c. roughly chopped cilantro, stems removed

In the jar of your blender, combine lime juice, vinegar, garlic, salt, and sugar. Blend until ingredients are completely combined. With the blender running, add the oil in a steady stream. Add cilantro and blend until the cilantro has broken down but still maintains some of its texture. Serve with greens, on any type of Mexican salad, or use as a marinade.



Grilled Fish Tacos

Mild white meat fish-cod, talapia, red snapper, mahimahi, etc.
Cilantro-Lime Vinaigrette
Corn tortillas
Shredded cabbage (or cole slaw mix)
Pico de Gallo or Homemade Salsa

Use a mild white meat fish like cod, tilapia, red snapper, mahimahi, etc.  Marinate in Cilantro-Lime Vinaigrette for about 20 minutes (reserve some marinade to add to cooked fish later).  Lightly brush the grill with oil and cook fish for about 8-12 minutes over medium heat (depending on the thickness of the fish) or until very flaky.  (I just used my electric counter-top grill.)  Flake cooked fish and season with leftover marinade if desired (make sure you use the reserved marinade and not the marinade that the raw fish was in!)   Serve the flaked fish in corn tortillas. You'll need to slightly cook the corn tortillas so they don't overwhelm the flavor of the fish; you can brush them with olive oil and bake them in an oven set to 425 for about 5-10 minutes or cook them in a skillet with some olive oil until they start to brown but are still flexible.  Serve with cabbage (cole slaw mix), Pico de Gallo or homemade salsa, the amazing Creamy Lime-Cilantro Dressing and/or guacamole.

Creamy Lime-Cilantro Dressing

I found this Creamy Lime-Cilantro Dressing over on Our Best Bites.  I had to make some.  It was super good.  They say it tastes like a Costa Vida/Cafe Rio style dressing.  I've only eaten at Cafe Rio a couple times but can't really tell you if this is what the dressing tastes like.  I know I really liked it and I know I really like this one...so it must be a match!  I stored my leftovers in a quart jar to use on salads later in the week.  Very tasty!  The green salsa does add quite a bit of heat though!  There is a note about the salsa at the end of the recipe.  Put it on any salad, slather it on a burger, serve it with tacos, or dip your chicken fingers in it.  You could probably drink it from the jar if you wanted to.  It's that good!


Creamy Lime-Cilantro Dressing


1 pack (1oz) Hidden Valley Ranch Dressing Mix (regular or buttermilk, and ignore directions on the packet)
1C mayo
1/2 C milk (or buttermilk depending on which packet you buy)
1 lime
2 cloves garlic, roughly chopped
1/2 C roughly chopped cilantro
1/4 C green salsa
*
hot sauce

 Place milk, mayo, and ranch mix in a blender.   Juice the lime in there too, you should get about 2T juice.  Toss in the garlic, cilantro and green salsa.  Blend 'er up.  Sample it and add hot sauce to taste.  Make it several hours ahead of time to allow it to thicken.


*A note about green salsa:
There are several brands of green salsa available in most supermarkets and they have various degrees of heat.  One of the most commonly seen brands is Herdez. Herdez 
brand is a lot spicier than any of the others I've tried.  Even their medium green salsa is way too spicy for my liking.  I like to buy La Costena because their  medium is actually really mild.  That way I get all of the flavor of the tomatillos but I control the level of heat with the hot sauce.  If you're not used to buying green salsa, make sure to sample it first before you put it in the dressing so you know what you're getting into!

Asian Wonton Salad with Sesame Dressing

This is a very yummy salad on its own but throw in the dressing  and it is so delicious!  I'm not saying it's the healthiest salad around (fried wontons and all) but it is good.  They served it at a women's conference I went to and we were lucky enough to get the recipe.  The dressing recipe makes more dressing than what I like on the salad so I just save the rest for a salad on another day.  Double this recipe if serving a large group.

Asian Wonton Salad
1 head romaine lettuce
cherry tomatoes
1/2 red onion, sliced in thin strips
1 cucumber, sliced
2-3 cooked chicken breasts, cubed, optional
1/2 package wonton wrappers
oil for frying

Heat about one inch of oil in a skillet to 375 degrees.  Cut wontons into thirds (I like to use a pizza cutter to make it easier).  Fry wontons a few at a time.  Drain on paper towels.  These can be made ahead of time.

Tear lettuce into bite sized chunks and put in a large salad bowl.  Toss with cherry tomatoes, cucumber, and red onion.  Add chicken if using.  Top salad with Sesame Dressing and toss together.  Add wonton crisps last and toss to combine.

Sesame Dressing
1/3 cup rice vinegar
1/2 cup canola oil
1-2 Tbsp. sesame oil
1 Tbsp. soy sauce
2 cloves garlic, pressed
1/4 cup sugar
2-4 Tbsp. sesame seeds

Place all ingredients in a jar or container with tight lid.  Shake vigorously until well incorporated.  This can also be made ahead of time.  Store leftovers in fridge.

B-B-Q Ranch Chopped Salad

It's getting to be salad time!  That means it's too hot to cook!  We've been having plenty of days in the 90s already.  Whew!  I made this up yesterday with what we had on hand in our fridge.  I think the only thing that was missing was tomatoes.  How could I be out of tomatoes?!  I'll definitely be adding those in next time because there will definitely be a next time for this salad.  Great flavor and my kids just inhaled it!  We ate the entire bowl for one meal!  If you're not planning on eating it all in one meal I'd probably suggest doing half the recipe or else putting the dressing just on the salad you're planning to eat right away.  This reminded me of California Pizza Kitchen's B-B-Q Chicken Chopped Salad.  It's one of the only things I've ever had at CPK and after making that soup the other day I've been craving their salad ever since.  This definitely satisfied that craving!  It was great without chicken but you could also add grilled B-B-Q chicken.  Great way to use up some leftovers for the upcoming grilling season!  We added some Honey-Roasted Walnuts for fun.  But those are delicious no matter what!

B-B-Q Ranch Chopped Salad
1/2 head Romaine lettuce
1/2 bag Baby Spinach (or more)
1/3 purple onion, diced into small pieces
1 cucumber, diced into small pieces
2 carrots, diced
2 tomatoes, diced
1 can black beans, rinsed and drained
1 can sweet corn, drained
1/2 cup B-B-Q sauce
1/2 cup Ranch Dressing
Honey-Roasted Walnuts, optional


Rinse, dry, and cut lettuce into 1/8-inch-wide strips.  Cut spinach into 1/8-inch-wide strips.  (I just grab a handful at a time and slice through it all.)  Combine greens with diced onion, cucumber, carrots, beans, and corn...and tomatoes!  In separate bowl mix Ranch dressing with B-B-Q sauce.  Drizzle over salad and mix until coated.  If you need more dressing just mix equal proportions of dressing and sauce.  You might want extra to serve with salad at the table.  Serve with Honey-Roasted Walnuts if desired.

Honey-Roasted Walnuts

My sister Kirsten introduced this delicious method for glazing walnuts to me when she came and stayed with us to help me out for a few weeks during one of my pregnancies.  We ate like kings while she was here!  She's such a good cook. Her husband's a lucky guy...but I'm sure he already knows that ;)

Honey-Roasted Walnuts
Olive Oil
Honey
Walnuts

Heat a small amount of olive oil (depending on how many walnuts you're roasting) in skillet over medium heat.  Add walnuts.  Stir until heated.  They can burn quickly so keep an eye on them!  Drizzle a generous amount of honey over the walnuts and stir for about a minute or so.  Remove from heat.  Use for salads, snacks, or anything your heart desires!

Pumpkin Spice Roasted Chickpeas

I ran accross this recipe today and HAD to make it.  I had everything I needed and whipped some up just in time for my kids to have as a school snack.  Talk about a healthy and satisfying snack!  They were so good!  I think they would also be very yummy on a salad.  I made a double batch (because one can of beans doesn't last very long in my family) and they were gone in minutes.  Give these a try if you're looking for something sweet and healthy to snack on or if you need a new salad topping!


Pumpkin Spice Roasted Chickpeas

1 can of chickpeas, rinsed, drained and patted dry
2 T. maple syrup (you could also use agave nectar)
1 t. canola oil (or oil of your choice)
1 t. apple cider vinegar
1/8 t. salt
1/4 t. nutmeg
1/4 t. ginger
3/4 t. cinnamon

Preheat oven to 350. Combine all ingredients in a large mixing bowl until evenly coated.  Spread chickpeas on a cookie sheet sprayed with cooking spray.  Bake for 25 minutes. Stir chickpeas every ten minutes to ensure even crisping.

Teriyaki Pasta Spinach Salad

This salad is one of my top two favorite salads of all time. To be in my top two I have to be able to want to eat them every single week. (Not that I do...just that I WANT to.) My favorite is still the Fiesta Pasta Salad but this one is so close it's practically a tie. They served this at our church Super Saturday Craft Day a few weeks ago and I really think I might have died if they didn't share the recipe. Thank goodness they did! You have to try this one. I love the dressing, the honey roasted peanuts, the mandarin oranges, and the craisins. Mmmm...so tasty. When I went to buy my ingredients to make this my grocery store only had the mini-size bow tie pasta. I also didn't put any fresh parsley in. Oh...and I just used one big can of chicken breast instead of cooking up my own. Oh...and it's originally called "Spinach Pasta Salad" but I thought it needed to include the word "Teriyaki" because that's what makes it soooo yummy! So I think those are all of the changes I made. This makes a ton! Easily enough to feed 6-8 people. When I was putting it together I made as directed but saved back about 1/3 of the dressing, 1/3 of the spinach and toppings, and 1/3 of the pasta. That way I could mix up a "fresh" batch the next day for lunch since I knew we probably wouldn't eat it all at once. The original recipe was double the amounts below. Since I doubt I'll ever need to make THAT much I'm just going to post the 1/2 size that I made (before I divided it into thirds) and if I ever need to make a HUGE batch then I'll just double it. OK. Enough chattering. Here's the recipe!

Teriyaki Pasta Spinach Salad

1 bag (10 oz.) spinach
2-3 green onions, sliced
1/4 c. fresh parsley
1/3 c. craisins (I put in a few more!)
1/3 c. honey roasted peanuts (I put in a few more!)
1 can mandarin oranges, drained (I cut each segment in half just to make more pieces in my salad.)
1-2 c. cooked, cut-up chicken (or 1 large can chicken breast)
1 box (12-16 oz.) bow tie pasta (You're actually supposed to use 1/2 this amount but I don't know if it was because I used the mini-size pasta or what but the whole box seemed just right...especially after I took 1/3 out to save for the next day.)

Dressing:
1/2 c. vegetable oil
1/3 c. Teriyaki sauce
1/3 c. rice vinegar
1/4 tsp. salt
1/4 tsp. pepper

Prepare the dressing ahead of time and refrigerate overnight. (Mine got about two hours of refrigeration and it was just as good as the 1/3 I reserved for the next day.) Mix all salad ingredients together and add dressing just before serving.

Quinoa Salad

This is a fresh, flavorful, and very colorful salad. This is my "base" recipe. I like to change it up a bit by using different vegetables like cooked corn, scallions, fresh chopped zucchini, or avocado. Fresh parsley and/or mint is also delicious. To make it more of a meal you could add black beans or chick peas. Sometimes I also like to add a sprinkle of chopped walnuts for some extra crunch. Like I said, I change it up quite a bit depending on what I have on hand and what I'm feeling like. By adding different vegetables and seasonings you can change it to "Mexican Quinoa Salad" with a little chili seasoning, corn, and beans or "Italian Quinoa Salad" with Italian seasoning, olives, and basil or even "Oriental Quinoa Salad" with soy sauce or peanut sauce instead of the lemon and olive oil, slivered carrots and snow peas. The possibilities are endless! Don't be afraid to experiment. Just think of the flavors you love!

Quinoa Salad
1 1/2 cups uncooked quinoa, rinse well
3 cups water
1 cucumber, peeled and diced
1 red or yellow bell pepper, diced
1/2 cup lightly steamed broccoli florets, chopped into smaller pieces if needed
1 cup cherry or grape tomatoes, halved or quartered (depending on size)
3 Tbsp. olive oil (or use vegetable broth for a lower fat dressing)
1/4 cup lemon juice (sometimes I use lime juice)
1-2 cloves garlic, minced
salt and pepper to taste

Bring water and rinsed quinoa to a boil. Reduce heat to simmer, cover with lid, and cook for 15-20 min.

While quinoa is cooking, whisk together lemon juice, olive oil, garlic cloves and salt and pepper.

When quinoa is finished cooking, allow to cool slightly. Toss with vegetables and lemon juice mix, stirring to combine well. Add more salt and pepper to taste. Chill before serving.

Crab Pasta Salad

I made this recipe up for one of our 4th of July festivities. It was really good! I think I'd like to throw a diced cucumber in there next time. I don't like my salads very "saucy" but if you do you may want to increase the mayo and ranch amounts to 1/2 cup each (or more).

Crab Pasta Salad

1 package small-size pasta, cook as directed
8-12 oz. imitation crab meat, flaked
1/2 cup finely diced onion
1/3 cup low fat mayo
1/3 cup low fat ranch
1 1/2 cups frozen peas, thawed
salt and pepper to taste
baby spinach or salad greens
cherry tomatoes, halved

Cook pasta as directed. Rinse with cold water and set aside. In a separate bowl, combine mayo and ranch dressing until well mixed. Add thawed peas, onion, and salt and pepper. Mix gently with pasta. Add flaked crab meat. Cover and refrigerate for 2 hours. Serve on a bed of spinach or salad with cherry tomatoes on top.

Fresh Italian Salad

Simple and fresh are the two words I'd use to describe this salad. Eat right away or make it a few hours in advance. Delicious either way.

Fresh Italian Salad

2 cucumbers, peeled and diced
1 package cherry tomatoes, halved
1 can black olives, drained and halved
1/4 cup sliced onion
juice of half-whole lemon
Mrs. Dash Tomato Basil (or your favorite Italian seasoning) to taste

Mix vegetables and toss with lemon juice and seasonings. Enjoy!
